Ingredients
- 13 cups zucchini- sliced
- 4 cups onions- quartered
- 2 red peppers- chopped
- 2 green peppers- chopped
- 2 carrots- chopped
- 2 1/2 cup vinegar
- 4 1/2 cup white sugar
- 1 tsp turmeric
- 1 tsp celery seed
- 1/3 cup mustard seed
- 1/3 cup pickling salt
Preparation
Step 1
Grind zucchini, onions, peppers and carrots in a food processor til coarse.
Drain off excess liquid.
Place mixture in a large plastic bowl and add pickling salt.
Let stand overnight.
Drain and rinse well.
In a large pot, add vinegar,sugar,turmeric,celery and mustard seed and bring to a boil.
Add vegetables and bring to a low boil, simmer for 30 minutes.
Ladle into hot jars and screw on hot lids and rings.
You must have very hot jars and lids since you don't use a canner.
Makes 5-6 pints
