- Egg, lightly beaten
- Shredded cheese, if desired

1. Shape leftover mashed potatoes and shredded cheese into patties then dip into lightly beaten egg. Drag through bread crumbs
2. Heat oil in a skillet and lightly fry patties until golden brown on each side
