Really Good Paleo Turkey Chili

Hearty and healthy Paleo chili is easy to make and is perfect for making in a big batch to have quick-to-heat lunches ready to go.

Ingredients
- BASICS:
- Olive oil to coat the pan
- 2 large onions, chopped
- 4 cloves garlic, minced
- 9 regular size carrots, chopped
- 3 to 4 zucchini, chopped
- 3 to 4 yellow squash, chopped
- 3 to 4 peppers, any color, chopped
- 2 pounds ground turkey
- SPICES:
- 4 tablespoons chili powder
- 2 tablespoons paprika
- 3 to 4 teaspoons red pepper flakes, less if you don't want it spicy
- 3 teaspoons cumin
- Dash of cayenne pepper, if you like it spicy
- LIQUID:
- 2 (14-ounce) cans diced tomatoes
- 1 (28-ounce) can tomato sauce
- 2 cups chicken broth
- 2 tablespoons apple cider vinegar
Preparation
Step 1
Take all your basic ingredients (minus the meat) and get them cooking in the olive oil. Salt and pepper generously.
Add the meat, some salt & pepper, and let it cook for a little bit.
Add the spices and give it a good stir.
Add the liquids and bring to a boil.
Lower heat, then cover, and let simmer for about 60 minutes.
Take the cover off for the last 10 minutes.
*Can also make in a big batch & then freeze in batches.
