Pesto Spinach Lasagna

Ingredients

  • 1 26oz jar pasta sauce
  • 1 10oz box lasagna noodles
  • 11-oz pesto
  • 1 15-oz container ricotta cheese
  • 1 12-oz bag baby spinach
  • 1 c. grated Parmesan cheese
  • 16 oz mozzarella cheese, sliced
  • 1/4 c. water

Preparation

Step 1

Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Add a layer of uncooked lasagna noodles. Mix ricotta cheese and pesto together. Smear some onto the noodles. Add a handful or two of baby spinach, and top with a layer of Parmesan and slice mozzarella cheese. Repeat layers until you run out of ingredients. The spinach is fluffy, so you're going to have to squish it down to make it all fit.
Before closing the pot, put 1/4 cup of water into the empty pasta sauce jar and close and shake. Pour this saucy water over the top of everything. cover with aluminum foil. Bake in 350 degree oven for 45 minutes. uncover, top with 1/2 cup of mozzarella cheese. bake additional 15 minutes. Remove from oven and let stand 10 minutes before serving.
