Easy Mashed potatoes

Ingredients

  • 8 large potatoes - peeled and cubed
  • 1 8 oz. low fat cream cheese
  • 1/4 cup low fat sour cream
  • Salt and pepper to taste
  • Butter or margarine to taste

Preparation

Step 1

In a saucepan with small amount of water, boil potatoes until tender. Drain and mash. Add cream cheese, sour cream, salt and pepper, mixing well. Scoop into a 2 quart casserole or larger and top with pats of butter. Cover and refrigerate up to 2 days. To serve bake uncovered at 350 for 30 to 35 minutes or until potatoes are heated through.
