Cranberry Apple Pecan Muffins

Ingredients
- Topping:
- 3 cups flour
- 1 1/4 cups sugar
- 2 TBL baking powder
- 3/4 teas. salt
- 2 eggs
- 2 large apple (Granny Smith) coarsely chopped, skin and all
- 2-3 cups fresh cranberries coarsely chopped
- 1/2 cup of butter, melted
- 3/4 cup milk
- 1 cup pecans chopped
- 1/2 teas. cinnamon
- 1/4 cup coarse sugar
Preparation
Step 1
1.Combine all dry ingredients. Add cranberries, apples and pecans. Beat eggs and milk together. Add butter and beat (make sure butter is cooled)
2. Combine dry and liquid ingredients just enough to moisten.
3. Fill muffin tins lined with paper backing cups (I use an ice cream scoop) and really mound the batter high. Sprinkle with coarse sugar and cinnamon combined.
4. Bake 400 degrees 25 to 30 minutes.
