Potatoes Peppers Sausage Ann Heller's

Ingredients

  • 1 pound sausage
  • 1 1/2 pound green peppers
  • 1 pound new potatoes
  • 1 large onion
  • 1/4 cup good olive oil
  • salt and freshly ground pepper

Preparation

Step 1

Preheat oven 425 degees
trim peppers, removing seeds, cut into rough 1 inch pieces
cut potatoes into 1 inch cubes
cut onion into similar size cubes

Pile vegetables into shallow casserole
drizzle oil over them and mix to coat
sprinkle with salt and pepper
top with sausages
bake for 30 minutes, stirring several times until potatoes are tender.
Mettwurst, polish, or italian sausage is suitable. If desired, cut in sections before adding to potatoes
