Ingredients

  • 3 oz.beef fillet
  • salt and pepper to taste
  • 1/4 cup diced onion and yellow peppers
  • 1 tbsp diced scallions
  • 1 tsp.or spray oil
  • 2 tbsp.pineapple juice
  • 2 tbsp chicken stock
  • 6 romaine hearts
  • 2 tbsp salsa
  • 1 oz Mexican blend cheese(low-fat cheddar and part-skim mozzarella)
  • 1/2 cup garbanzola peas
  • cup diced tomatoes

Preparation

Step 1

Season the beef with salt and pepper and sear in a large pan.Cool the meat and dice it into small pieces.
Saute the bell pepper,onion,and scallions in oil until caramelized.Add the beef and cook for 1 to 2 min. or until the meat reaches your desired doneness.Add the pineapple juice and chicken stock to the pan and allow it to reduce.Serve the tacos with the romaine harts,salsa,cheese,black beans,and tomatoes.

Side: 1/4 cup Mexican rice
