Ingredients
- olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 1/4 cup green pepper, chopped
- 2 cans cut tomatoes with juice
- 2 cans cannellini beans, drsined
- 8 cups chicken broth- 5 cans
- salt, pepper
- 1 cup elbow macaroni
- parm cheese
Preparation
Step 1
1. heat oil and stir in veggies. cook till begin to brown about 10 minutes.
2. add tomatoes and cook uncovered till slightly darkened about 8 minutes. add beans, stock, salt and pepper. bring to a boil and then back to a simmer. cook 5 minutes.
3. with back of a spoon mash some beans to thicken soup a little. add pasta if serving that night (if freezing do NOT add pasta). bring back to a boil and cook till pasta 5 minutes. remove from heat, cover and let stand 10 minutes before serving.
4. add parm cheese.
