Creamed onions

Ingredients

  • 1 lb pearl onions (or use frozen ones)
  • 1 1/2 T butter
  • 3 t cornstarch
  • 1/2 c milk
  • 1/2 c half and half
  • 1/2 t salt
  • 1/4 t black pepper

Preparation

Step 1

1. preheat oven to 350 degrees.

2. half fill large saucepan with cold water. Drop in pearl onions. Bring to a boil and boil for 1 minute. Use slotted spoon and remove onions. Peel and return to boiling water. Simmer for 10 minutes. Drain and reserve 1/3 of the liquid. (if use frozen ones don't do this step)

3. put onions into shallow 2 quart baking dish.

4. in small saucepan melt 1 1/2 T butter.

5. mix cornstarch in small amount cold water and add to butter. Cook over low heat stirring, about 3 minutes.

6. add reserved liquid along with milk, and the half and half, salt and pepper. cool, whisking constantly as thickens (about 3 minutes). pour over onions and bake till bubbling about 15 minutes.
