Spinach Artichoke Bake

Ingredients

  • 2 pkg frozen chopped spinach- drained and thawed
  • 8-12 sliced mushrooms
  • 1 jar artichoke hearts, cut into pieces
  • 4 large eggs
  • 1 cup low fat sour cream
  • 1/2 cup low fat mayo
  • 4 T parm cheese
  • 4 t garlic- chopped
  • salt and pepper

Preparation

Step 1

1. preheat oven to 350 degrees.

2. saute sliced mushrooms.

3. beat eggs, and add sour cream, mayo, garlic, parm, salt and pepper.

4. fold in spinach, artichokes, and mushrooms into egg mixture.

5 put in well greased casserole dish.

6. bake 35-40 minutes till golden brown on top.
