Shrimp Croquettes

Ingredients

  • 3/4 lb cooked shrimp
  • 3 Tbs Crisco
  • 1/3 cup flour
  • 1/2 cup milk
  • 2 Tbs Chopped onion
  • 1 tsp snipped parsley
  • 1 Tbs lemon juice
  • 1/4 tsp salt
  • dash pepper
  • dash paprika
  • 3/4 cup bread crumbs
  • 1 egg, beaten
  • 2 Tbs water
  • 1 pkg frozen peas
  • Velveeta Cheese

Preparation

Step 1

Chop shrimp. Melt crisco. Blend in flour. Add milk. Cook and stir over medium heat till very thick and smooth; remove from heat. Add onion, parsley, lemon juice & seasonings. Stir in shrimp.

Preheat crisco for deep frying or broil. Shape shrimp into 8 cones about 1/4 cup. Roll in crumbs combine egg with water. Dip cones in egg mixture, roll in crumbs again. Deep fry about 3 min or broil until brown. Spoon peas over croquettes
