Ingredients
- 12 whole Red Potatoes (or Other Small Round Potatoes), cleaned
- 3 Tablespoons extra virgin Olive Oil
- Coarse Garlic Sea Salt Grinder to taste
Preparation
Step 1
1. Place red potatoes in a ziploc steamer bag . Microwave for 6 minutes. Cool , cut in half if potatoes are medium size
2.On a rimmed baking sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
3.With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Drizzle the tops of each crushed potato with olive oil.
4. Grind generously the tops of potatoes with the garlic/sea salt
5.Bake in a 450 degree oven for 20-25 minutes until golden brown.
