Ingredients
- 3 SLICES BACON (I USE MORE)
- 1 SMALL ONION
- 2 - 3 CLOVES GARLIC, MINCED
- 2 (14.5 OZ.) CANS ITALIAN FLAT CUT BEANS
- 1 SMALL RED PEPPER CHOPPED
- 1/2 CUP SHREDDED SWISS CHEESE (I USE MORE)
- 1/2 CUP SLICED ALMONDS
Preparation
Step 1
IN LARGE FRY PAN, FRY BACON UNTIL CRISP. SET ASIDE TO COOL, RESERVING ONE TBSP. BACON GREASE, DISCARD THE REST. OVER MEDIUM HEAT, SAUTE GARLIC AND ONION UNTIL TENDER. ADD ALMONDS AND SAUTE UNTIL LIGHTLY BROWNED. ADD BEANS, STIR FRY UNTIL HEATED THOROUGHLY - 2 TO 3 MINUTES. ADD RED PEPPER, STIR FRY 1 MINUTE. REMOVE FROM HEAT, TRANSFER INTO SERVING BOWL. CRUMBLE BACON OVER TOP. SPRINKLE WITH SHREDDED CHEESE. SERVE IMMEDIATELY. MAKES 8 SERVINGS.
