Corn bread casserole

Ingredients

  • 2 large onions,chopped
  • 6 tablespoons butter or margarine
  • 2 eggs
  • 2 tablespoons milk
  • 2 --17oz. cans cream style corn
  • 1 Jiffy package cornmeal muffin mix
  • 1/2 pint (1cup) sour cream
  • 2 cups shredded sharp cheddar cheese

Preparation

Step 1

Preheat oven 400degrees. Butter 9x13inch baking pan. In skillet saute onion in butter until golden brown.SET aside.
In a large bowl mix eggs and milk until blended. Add corn and muffin mix, and mix well. Spread corn batter into prepared baking dish. Spoon onions over the top. Spread sour cream over onions. Sprinkle with cheese.

Bake 35minutes or until puffed and golden. Let stand 10minutes before cutting. May be refrigerated or frozen.

Note: You can get by with 1cup of cheese if necessary.
