Egg Salad with Horseradish and Tarragon and Avacado Lime Sauce

Ingredients

  • 12 hardboiled eggs
  • 6 tablespoon mayonnaise
  • 6 tablespoons ricotta cheese
  • 2 tablespoons horseradish
  • 3 tablespoons white onion
  • 1 tablespoon & 1 1/2 teaspoon tarragon
  • 1 teaspoon salt

Preparation

Step 1

Slice top third of narrow end of egg. Scoop out yolks and crumble with fork. Chop 6 of the whites and toss with yolks. Stir in mayo, ricotta, horseradish, onion, tarragon and salt

Fill remaining 6 whites with mixture

Avacado Lime Sauce

1/2 cup ripe Avacado
2 tblsp lime juice
2 small garlic cloves
1/2 tsp salt
1/2 tsp fresh ground pepper
6 tblsp olive oil
Blend in food processor
