Ingredients
- Salt
- 12 oz fettuccine
- 1 tablespoon unsalted butter
- 1 large shallot, minced
- 1 1/4 cups heavy cream
- I large egg yolk
- 1-2 teaspoons lemon zest
- 1/3 cup pecorino cheese
- Ground pepper
Preparation
Step 1
Cook fettuccine: save 1/2 cup cooking water
Melt butter in skillet over medium
Add shallot and salt, cook 3 min
Whisk cream, egg yolk, lemon zest in bowl
Reduce heat to low and add cream mixture and cheese to skillet
Cook, whisking 2 min
Season with salt and 2-3 teaspoons pepper
Add pasta to skillet and toss
Add reserved water to loosen sauce
