Butternut Squash Crab Bisque

Ingredients

  • 4 Onions
  • 4 Garlic Cloves
  • 2 Butternut Sqaush
  • 1 Sweet Potato
  • Vegetable stock to cover
  • sage
  • black pepper and salt
  • cream

Preparation

Step 1

Carmelize Onions in butter and olive oil
Saute Garlic
Add 2 x Butternut Squash and 1 x Sweet Potato cubed with vegetable stock so it just covers
simmer until cooked
add sage, black pepper, and salt
add cream and puree
add crab and cook
serve with croutons
