Shrimp Fried Rice

Ingredients

  • 1 bag frozen peas
  • 4 - 6 eggs, beaten & cooked separate as scrambled
  • low sodium soy sauce
  • 1 box cooked cold rice, brown or white
  • olive oil
  • 1 - 2 bags frozen shrimp, peeled, deveined
  • pepper to taste

Preparation

Step 1

cook rice ahead & chill
cook scrambled eggs ahead, set aside

in heavy skillet or wok, heat olive oil and add thawed shrimp & peas
stir fry until hot & shrimp are cooked
add rice, mix & fry until hot, than add eggs, soy sauce & pepper to taste
