Coconut Cream Pie

Ingredients

  • 3/4 cup sugar
  • 1/2 cup flour flour
  • 1/4 teaspoon salt
  • 2 eggs beaten
  • 3 cups light cream or half & half
  • 1 tespoon vanilla
  • 1 baked 9 inch pie shell
  • 1 cup heavy cream whipped
  • 1 cup shredded or flaked coconut

Preparation

Step 1

mix together in a medium sauce pan the half&half, sugar, flour, salt, and eggs
bring to a boil over low heat, stir constantly
remove from heat and add the vanilla and 3/4 cup coconut
pour the filling into the pie shell and chill about 4 hours
top with whip cream or meringue and sprinkle with tosted coconut
