Sausage Rolls - Appetizers (Naked Chef's Recipe)

Ingredients
- Choice of filling (about 1 1/2 T. for each roll):
- 1 pkg. (2 sheets) pastry sheets
- 8 italian sausages (thin type)
- 2 eggs, beaten
- (sugggestions for filling: pesto, dijon mustard, whole grain mustard, cranberry sauce, apple sauce, sundried tomato paste, red onion jam)
Preparation
Step 1
Measure 2 sausages along top edge of sheets so they fit to the edges. (If too small, roll pastry sheet to fit.) Cut pastry sheet lengthwise between the two sausages; cut pastry sheet in half horizontally, so you now have 8 sheets.
Remove casing from sausages, and replace at top of each sheet. Brush egg along bottom 1/2 inch of each sheet. Add your selected filling to center of each sheet, and spread it out to the sides, to just a little above the brushed egg.
Roll the sausage in the sheet, pushing back any filling that may "squish" out, and overlap the egg-brushed bottom to the top of the sheet, sealing the edge.
Cut the log into 3 equal pieces Place them seam-side down on a parchment-lined baking sheet, and brush each piece with egg.
Bake for about 20 minutes at 100 C. (which equals 392 F.)
