Ingredients
- 6 c. chicken broth
- 1 c. diced Italian tomatoes
- 2 tsp cumin
- 1 minced garlic clove
- 1 tsp salt
- 1/2 tsp pepper
- 1 can cream style corn
- 1 12 c. shredded American cheese
- 1/4 c. cornstarch
- 1/2 c. water
- 1 lb ground beef
- 1 chopped onion
- 1 chopped sweet pepper
- Tortilla chips
Preparation
Step 1
Bring broth to a boil in a large pot. Add tomatoes with juice. Add cumin, garlic, salt, pepper, corn, and cheese. Bring to a boil again. Dissolve cornstarch in water in a small bowl. Add to boiling soups slowly while stirring. Let simmer 10 minutes. while soup simmers, sauté ground beef with chopped onion and pepper. Drain off any grease. Add beef mixture. Simmer another 5 minutes. serve with sour cream. Shredded cheddar cheese and tortilla chips.
