Sunny Rice Salad with Apples

Rice, sunflower seeds, chopped apple, and an apple cider dressing are combined for a unique and deliciously fresh salad.

Ingredients

  • Salad:
  • 2 cups cooked and cooled white rice
  • 1 medium crisp apple, diced
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped carrots
  • 1/2 cup chopped sweet onion
  • 5 dates, chopped
  • 1/3 cup sunflower seeds, preferably unsalted
  • 1/4 cup chopped fresh parsley
  • salt and pepper to taste
  • Dressing:
  • 1/4 cup apple juice or cider
  • 1 T. fresh lemon juice
  • 1 T. olive oil
  • 1 t. all purpose seasoning (such as McCormick’s)

Preparation

Step 1

Mix all salad ingredients together in a large serving bowl.

Mix all dressing ingredients together in a separate bowl.

Pour dressing over salad and mix well.

Serve cold or at room temperature.
