Ingredients
- 1 lb. Cooked sausage, halved lengthwise and cut in 2 in. chunks
- 1 T. cooking oil
- 1 c. dried orzo
- 1 14 oz. can broth
- 1 t. dried Italian seasoning
- 2 med. zucchini, chopped (2 1/2 c.)
- 1/3 c 1-inch slices green onion and chopped red pepper
Preparation
Step 1
In large skillet over med heat, brown sausage in oil for 2 min. Stir in orzo. Cook and stir one minute. Stir in broth, 1/2 c. water and seasoning. Bring to boil. Reduce heat. Simmer, covered, 8 min. until orzo is tender. Add zuchinni last 4 min. of cooking. Stir in green onions and red pepper. Season w/ salt and pepper.
