Roasted Potatoes with Blue Cheese Ranch Dressing & Green Onions

Ingredients

  • 2 # potatoes, red or yellow, halved
  • Canola oil
  • Kosher salt & fresh ground pepper
  • 3/4 cup buttermilk
  • 1/4 cup mayo
  • 2 cloves garlic, finely chopped
  • 2 tsp Dijon mustard
  • 1/4 # crumbled blue cheese
  • 4 green onions, thinly sliced

Preparation

Step 1

Preheat the oven to 375 degrees. Toss potatoes on a baking sheet with the oil and season with salt & pepper. Roast in the oven till golden brown and tender, about 25 minutes. Transfer potatoes to a platter.

Whisk together the buttermilk, mayo, mustard & garlic in a bowl & season with salt & pepper. Fold in the blue cheese & green onions. Spoon the sauce over the potatoes & serve.
