Carrot Cake

Ingredients

  • Carrot Cake:
  • 1 1/2 cup oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups flour
  • 2 tsp baking soda
  • 1 tsp. salt
  • 2 1/2 tsp. cinnamon
  • 2 1/2 tsp. vanilla
  • 3 cups gratted carrots
  • 1 cup chopped walnuts
  • Cream Cheese Icing:
  • 8 oz pkg of cream cheese
  • 1 cube butter
  • 1 box of powdered sugar
  • 2 tsp of vanilla

Preparation

Step 1

Carrot Cake:

spray pan with bakers Joy 9x13, bundt or (3) 8" layers
Preheat oven to 325
Combine oil, sugar, eggs and beat well

Combine flur, soda, salt, and cinnamon, blend

Mix above together and beat 2 minutes.

Add vanilla, blend

Add carrots and nuts, stir to blend

Bake in 9x13 for 45 minutes

Cool and frost

Cream Cheese Icing:

Leave cream cheese and butter out to soften.
Cream together cream cheese and butter

Add powdered sugar and vanilla

Frost the cake withn cool or frozen.

refrigerate, don't leave out! Moist cakes will mold quickly.
