Spiced Shrimp w/ Green Beans & Lime

Ingredients

  • 1 Cup long grain white rice
  • 1/2 Cup fres cilantro leaves
  • 2 Tablespoons olive oil
  • 1/2 Lbs green beans, cut into 1/3
  • 4 gloves chopped garlic (2 teaspoons from jar)
  • 1 to 2 red or green jalapenos thinly sliced
  • 1 1/2 Lbs large shrimp
  • 1 1/2 teaspoons chili powder
  • 1/4 Cup lime juice
  • Kosher salt & Black pepper

Preparation

Step 1

1. Cook the rice according to the package directions; fluff with a fork and fold in the cilanto.

2. Meanwhile, heat the oil in a large skillet over medium-high heat. Add the green beans, garlic, jalapenos, salt and pepper and cook tossing frequently for 3 minutes.

3. Season the shrimp with chili powder, salt and pepper, add them to the skillet and cook, tossing occasionally until opaque throughout, 3 to 5 minutes. Sitr in the lime juice and serve over the rice.
