Sweet Potato Burritos

Ingredients

  • 2 tbsp oil
  • 1 small onion, chopped
  • 2-3 garlic cloves
  • 4 cups kidney beans
  • 1 1/3 cups water
  • 1 1/2 tsp chili powder
  • 1 1/4 tsp cumin
  • 2-3 tbsp prepared mustard
  • 1 pinch cayenne
  • 2 tbsp soya sauce
  • 1 tbsp brown sugar
  • 3 cups sweet potatoes, mashed
  • 8 10" flour tortillas

Preparation

Step 1

Preheat oven to 350°F.

Heat oil, saute onion & garlic, stir in beans & sweet potatoes.

Gradually stir in water, heat until warm.

Remove from heat & stir in chili powder, cumin, mustard, cayenne pepper, and soya sauce.

Divide bean & potato mixture evenly between the tortillas. Top with cheese.

Roll up and place on a baking sheet.

Bake for 12 minutes.
