savoury turkey brine

Ingredients

  • 1-3 gallons water
  • 1 +1/2 cups salt
  • 3/4 cups sugar
  • 12 fresh tarragon leaves
  • 2 tsp. pepper
  • 12 sprigs fresh thyme
  • 12 bay leaves
  • 12 sprigs rosemary
  • 10 cloves minced garlic
  • equal amounts molasses and soy sause
  • 1 +1/2 cup apple juice
  • 1 +1/2 cup orange juice
  • 1 +1/2 cup cranberry juice
  • 12-20 lb. turkey

Preparation

Step 1

mix all ingredients in a large non-reactive container, make sure salt and sugar are dissolved.
place turkey in brine, making sure entire turkey is covered. if a large enough container is not available, use a large heavy duty plastic bag.
refridgerate over night at least 12 hours.
remove turkey, discard brine.
pat turkey dry with paper towels and prepare as usual
