Oven Roasted Halibut

Ingredients

  • 2 # halibut fillets or steaks
  • Leaves from 2 rosemary sprigs
  • 1/4 C capers, drained
  • 1/4 C olive oil
  • 3 lemons, cut into paper thin slices
  • Salt and white pepper to taste

Preparation

Step 1

Preheat oven to 400 F. Place the halibut in a baking dish and liberally coat with the olive oil; lightly salt and pepper. Generously top with capers, rosemary and then the lemon slices. Bake for 12-15 min then broil for 5-7 min ( to crisp the lemon slices).
