Pumpkin Sauce

St. Lucia pumpkin sauce

Ingredients

  • 1 C. ripe pumpkin in cubes (fresh)
  • 1 med. red onion, diced
  • 2 cloves fresh garlic, chopped
  • 1 small clove ginger, chopped
  • 1 bunch spring onion, sliced fine
  • fresh thyme
  • 1/2 bottle white wine
  • olive oil, salt and fresh ground black pepper
  • 1 liter water

Preparation

Step 1

Heat olive oil in big cooking pot, add garlic, onion and ginger. Saute until it gets nice color.

Add scallion and pumpkin. Stir for about 4 minutes, season with salt and pepper.

Braise everything with white wine and reduce until only two inches left in pot, now add water and let boil for about 10-15 minutes.

After remove from heat and blend everything together with hand blender until the mix gets a smooth texture, check seasoning and the sauce it ready.
