Green Curry with Shrimp

Ingredients

  • 1 can coconut milk
  • 3 TSP green curry paste
  • 1 TSP oyster sauce
  • 2 TSP vegetable oil
  • 1 lb uncooked shrimp, peeled & deveined
  • 4 cup each broccoli, bell peppers, carrots, onions
  • 3 cup cooked rice

Preparation

Step 1

1. In saucepan over medium heat, combine coconut milk, curry paste & oyster sauce. Bring to boil, stirring occasionally. Boil 1 minute. Set aside.
2. Heat skillet over high heat. Add oil. Add shrimp & stir fry until cooked & opaque. Remove from skillet.
3. Add vegetables to skillet & stir fry until tender.
4. Add all ingredients to skillet. Bring to boil. Reduce heat & simmer 5 minutes.
5. Serve over cooked rice.
