Ingredients
- 2/3 C ready-made pesto
- 1 C thawed cooked shrimp
- 1 lb. linguine or spaghetti
- 1/3 C reserved cooking water
- salt and pepper to taste
- parmesan cheese to taste
Preparation
Step 1
Put pesto in a large bowl. Cook pasta until al dente. Add shrimp in last few minutes if frozen, or immediately before draining if thawed to warm.
Whisk 1/3 C reserved pasta water into pesto to thin. Add pasta and shrimp to pesto and stir all to combine.
Top with salt, pepper, and parmesan to taste.
