Ingredients
- 2 1/2 * 2 1/2 cups flour
- 1 1/2 * 1 1/2 teaspoons baking soda
- 1/2 * 1/2 teaspoon salt
- 3/4 * 3/4 cup butter, softened
- 1 1/2 * 1 1/2 cups brown sugar, packed
- 2 * 2 large egg
- 3 * 3 cups banana, mashed (appox 7)
- 1 * 1 teaspoon vanilla
- 1 1/2 * 1 1/2 cups toasted coconut
- 12 * 12 ounces macadamia nuts, chopped
Preparation
Step 1
Preheat oven to 325 degrees. Grease 2 loaf pans. Combine the dry ingredients. In a large bowl cream butter and sugar with an electric mixer on medium speed. Add eggs, bananas and vanilla, and mix at medium speed just until combined. Do not overmix. Add flour mixture and mix gently, then add the coconut and nuts. Stir until combined. Pour batter into pans. Bake on center rack of oven for 60-70 minutes. Cool in pan for 10 minutes.
