Lemon Basil Chicken with Goat Cheese, Spinach and Artichokes

Makes 4 servings
Ingredients
- 4 chicken breasts
- 2 tbsp. olive oil
- 4 oz. goat cheese
- 4 cups spinach
- 2 pieces water packed artichoke hearts
- 1/2 cup white wine
- 1/2 cup chicken broth
- 3 tbsp. fresh lemon juice
- 1 tsp. lemon rind
- 5 garlic cloves
- 1 tsp. flour (gluten free)
- 1 dash salt and pepper
Preparation
Step 1
Add 1 tbsp. olive oil to each of 2 large skillets and heat. Rub salt and pepper into chicken breasts and cook until done in 1 skillet. In second skillet add 1 minced garlic clove to oil and sauté. Once done, remove from pan and set aside. Drain 1 can artichokes hearts quarter. Add artichoke hearts to pan used for spinach and sauté for about 7 minutes.
Remove chicken from other pan once cooked thoroughly and set aside on platter. Tent with foil. To the same pan, add garlic, lemon juice, and lemon zest. Cook until fragrant (about 1 min). Add wine and broth. Reduce. add dices basil and about 1 tsp. of flour to thicken.
To serve, layer each chicken breast with 1 oz. goat cheese, sautéed spinach, and artichoke. Spoon over chicken breasts.
