Blueberry Bar Cookie

These golden browned blueberry bars are the perfect go-to treat when you need a little boost!

Ingredients

  • 1 1/2 cups quick-cooking rolled oats
  • 1 cup all-purpose flour
  • 3/4 brown sugar, packed
  • 1 1/2 sticks (3/4 cup) salted butter
  • 1 cup frozen blueberry preserves
  • 1 teaspoon ground lemon peel

Preparation

Step 1

Preheat oven to 350°F.

Line an 8x8x2-inch baking pan with foil, extending foil over edges of pan.

In a medium bowl, whisk together oats, flour, and brown sugar. Reserve 1 cup of mixture.

Press remaining oat mixture into the bottom of the prepared baking pan.

Bake for 25 minutes.

Meanwhile, for filling, in a small bowl combine frozen blueberry preserves, and lemon peel.

Carefully spread over baked crust.

Sprinkle with reserved oat mixture; press lightly into blueberry mixture.

Bake 30 minutes more or until top is golden brown. Cool completely before cutting into bars.
