Stuffed Mushrooms

Ingredients

  • 24 large fresh mushrooms
  • 1/4 cup diced onions
  • 1/4 cup margarine or butter
  • 2/3 cup fine dry bread crumbs ( I use canned seasoned crumbs )
  • 1 (8 ounce) can crab meat
  • 1/2 cup shredded Monterey Jack cheese

Preparation

Step 1

Wash and drain mushrooms. Remove stems. Reserve caps and chop enough stems to make 1 cup. ( I clean out the caps a little, scraping and cutting with a knife to leave room for lots of filling )
In medium saucepan cook stems and onion in margarine until tender.
Drain liquid from crab meat and add to mixture along with bread crumbs.
Spoon mixture into mushroom caps and arrange in baking pan.
Sprinkle cheese on top and bake at 425 for 8 to 10 minutes
