Coconut Macaroons

  • 4 14oz bags sweetened coconut flakes
  • 2 14oz cans sweetened condensed milk
  • 1/4 cup sour cream
  • 2 Tbs heavy cream
  • 1 Tbs vanilla
  • 1 bag dark chocolate candy melts {or chocolate chips}

Preparation

Step 1

Preheat the oven to 325 degrees. Line baking sheets with parchment paper.

Pour 3 bags of coconut into mixer. Add sweetened condensed milk, sour cream, heavy cream and vanilla and mix on slow. Slowly add the 4th bag of coconut. Mix about 15 seconds.

Scoop the macaroons w, about a tablespoon, and press together lightly. Bake for 12-15 minutes, or until bottom is caramelized and tops are browned.

Remove from baking sheet and allow to cool. Melt a bowl of chocolate and half dip the macaroons, then return to parchment paper and allow to harden in the refrigerator.
