Ingredients

  • 2 - 3 cups all purpose flour, adding only 1/2 cup at a time after the initial 2 cups.
  • 4 eggs
  • 1 TBS olive oil

Preparation

Step 1

Mix ingredients up with a dough hook until a ball is formed.

Knead on a floured surface for 10 minutes

Lightly cover the ball of dough with olive oil

Wrap in plastic wrap.

Flour your surface and pasta machine well.

Cut off 1/8 of the dough at a time and roll it through.

Boil water in a large stock pot. Salt water well (about 1/4 cup)

Boil pasta noodles for about 12 - 14 minutes, using 2 forks to separate the pasta strands the whole time.

Or if using for ravioli, boil pasta for approximately 5 minutes).
