Zucchini & Sausage Quiche

Ingredients
- 1 prebaked deep dish pie crust
- 2 cups zucchini, shredded
- 1/2 pound sweet Italian sausage meat
- 1 cup Swiss cheese, shredded
- 4 eggs, lightly beaten
- 1 1/2 cups half & half
- 1/4 cup Romano or Parmesan cheese, freshly grated
- 1/4 teaspoon white pepper
Preparation
Step 1
In quiche pan or deep dish pie pan, pre-bake pie crust at 450°F for 8 minutes.
Meanwhile, cook sausage meat in fry pan until no pink remains. Drain on paper towels. In sausage drippings, saute zucchini until tender. Spread zucchini in bottom of bake pie shell; top with crumbled sausage and then Swiss cheese.
Add remaining ingredients to eggs; blend well and pour into filled pie shell.
Bake at 450°F for 15 minutes. Reduce temperature to 350°F and bake 15 minutes. Let stand 15 minutes before serving.
