Peach Custard Pie

Ingredients

  • Crust:
  • 1 1/2 cups flour
  • 1/2 tsp. salt
  • 1 stick butter, softened
  • Filling:
  • 1 lb. 14 oz. sliced peaches, drained
  • 1/2 tsp. cinnamon
  • 1/2 cup peach juice
  • 1 cup evaporated milk
  • 1 egg

Preparation

Step 1

Crumble dry ingredients and butter with pastry blender. Press into 10 inch pie plate. Pour peaches into pie crust. Mix 1/2 cup sugar with 1/2 tsp. cinnamon. Sprinkle over peaches. Bake at 370 degrees for 20 minutes. Mix together 1/2 cup peach juice, 1 cup evaporated milk and 1 slightly beaten egg. Pour over peaches. Return to oven for 30 minutes. Cool thoroughly.
