Ingredients
- 4 servings
- 8 oz uncooked pasta
- 1 TBS olive oil
- 1 lb large shrimp
- 1 TBS minced garlic
- 1/4 c chopped shallots or green onions
- 2 TBS lemon juice
- 2 TBS brandky or sherry
- 1/4 cup chopped parsley
- 1/4 tsp salt
- ground pepper to taste
- 4 TBS butter or trans free marg
Preparation
Step 1
Cook pasta al dente and drain thoroughly
Healt olive oil in large saucepan. Add shrimp and cook 3 minutes. Turn and cook other side 2 min longer. Transfer to bowl/plate
Add garlic and shallots to saucepan and cook until fragrant (about 10 sec). Add lemon juice, brandy or sherry, parsley, salt and pepper. Add back in shrimp and pasta. Toss to coat all.
