Ingredients
- 1 1/2 cups dried red lentils
- 1 tsp crushed or minced garlic
- 4 1/2 cups water
- 2 tsp curry powder
- 1-2 large florets of broccoli, minced
- 1-2 carrots, diced
- sea salt to taste
Preparation
Step 1
In pot, bring lentils, garlic, and water to boil. Turn down heat, cover, and simmer for 20 minutes. Stir in curry powder and add broccoli and carrots. Simmer 5 more minutes. Add salt as needed. Optional: add red pepper flakes for some spice!
