Shrimp Creole

Ingredients

  • 1 onion chopped
  • 1 bell pepper chopped fine
  • 1/2 cup chopped celery
  • 1/2 bay leaf
  • 2 T margarine
  • 1 T flour
  • 2 cans diced tomatoes un-drained or 3 cans chopped tomatoes
  • 1 t. salt
  • 1/2 t sugar
  • 1/8 t cayenne pepper
  • 1 1/2 pound peeled cooked shrimp 3 cups hot cooked rice

Preparation

Step 1

Saute onion bell pepper, celery and bay leaf in margarine for 8 minutes

Add flour and stir 2-3 minutes

Add undrained tomatoes, salt, sugar and cayenne pepper

Mix and let simmer for 15 minutes

Add cooked shrimp and simmer ONL Y UNTIL shrimp are hot

Do not boil

Serve over cooked rice.
