Squash Casserole (Carolyn R. Mozingo)

Ingredients

  • 1 quart squash, boiled and drained
  • 1/2 sleeve Club Crackers
  • 1/2 chopped onion
  • 3/4 cup grated cheddar cheese
  • 1/2 cup reduced fat mayonnaise
  • Salt and pepper to taste

Preparation

Step 1

Boil squash until tender; drain and cool
Mash squash, mix with other ingredients,
Pour into casserole bowl

Bake at 350 degrees for 30 minutes (uncovered)
