Sweet Potato Pie

Ingredients

  • 1/2 cup sugar
  • 1/4 cup molasses
  • pinch of salt
  • 1 tablespoon lemon juice
  • 1 cup half and half
  • 3 eggs, separated
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon clove
  • 2 cups sweet potatoes, pureed
  • rum

Preparation

Step 1

1. Preheat oven to 425 degrees F.
2. Mix crust per directions and line 8" pie pan.
3. Combine sugar, molasses, salt, lemon juice and egg yolks and all spices; beat until smooth.
4. Beat in sweet potato puree and half and half.
5. Beat egg whites until stiff peaks form.
6. Fold the whites into the sweet potato mixture.
7. Pour into shell.
8. Bake 10 minutes.
9. Reduce heat to 350 degrees F and bake 35 to 40 minutes.
10. Add rum to flavor.
