Avocado & Crispy Prosciutto Salad

Ingredients

  • 2 thin slices prosciutto
  • 4 C mixed greens
  • 1/2 C thinly sliced onions
  • 1/4 C sliced olives
  • 1 avocado, cut into 6 slices
  • 1/2 C cilantro leaves
  • Black pepper
  • 2 T olive oil

Preparation

Step 1

Heat small skillet over med. heat. Cut prosciutto in 1" pieces. Add to skillet & fry til crisp. Remove from skillet & set aside.
Divide greens among four salad plates. Arrange onion, olives & avocado slices on greens. Add cilantro, salt & pepper. Drizzle with olive oil. Add fried prosciutto & serve
