Lentil Barley Soup

Ingredients

  • 2 tsp. canola oil
  • 1 c. sliced leek
  • 3 c. chicken or vegetable broth
  • 1 c. water
  • 3/4 c. beer
  • 1 c. chopped carrot
  • 1 c. chopped celery
  • 1/2 c. chopped parsnip
  • 1/4 c. fresh dill
  • 1/4 c. uncooked barley
  • pepper
  • 1/4 tsp. dried thyme
  • 2 bay leaves
  • 1/2 c. dried lentils

Preparation

Step 1

1. Heat oil in a dutch oven over medium-high heat.
2. Add leek & sauté 2 minutes.
3. Add broth, water & Beer.
4. Bring to a boil.
5. Add carrot, through to bay leaves. Return to a boil.
6. Cover, reduce heat & simmer for 15 minutes.
7. Stir in lentils & cook for 30 minutes.
8. Discard bay leaves.
9. Place 1 1/2 c. soup to blender & puree.
10. Return puree to soup.
11. Return to a boil. Reduce heat & simmer 10 minutes.
