Ingredients
- 2 egg whites
- 1 1/2 cups granulated sugar
- 1 tbs light corn syrup
- 1/3 cup cold water
- 2 tsp vanilla extract
Preparation
Step 1
Place all ingredients except vanilla in a double boiler over boiling water. Beat constantly with an electric mixer on medium high speed until stiff peaks form, 4-7 minutes. Remove from heat.
Add the vanilla and beat to spreading consistency
For:
Citrus, replace water with lemon, orange or lime juice. Spoon in 1 tbs of zest.
Coffee, replace the granulated sugar with brown sugar. Dissolve 2tbs of instant coffee powder in 1/3 cup hot water and omit cold water.
Peppermint, replace vanilla with 1/2 tsp peppermint extract. After frosting has cooled, fold in 1/3 cup crushed peppermint candies.
