Pumpkin Pie

Ingredients

  • 1 1/2 c. sugar
  • 1 t. salt
  • 2 t. cinnamon
  • 1 t. ginger
  • 1/2 t. cloves
  • 4 eggs, slightly beaten
  • 3 1/2 c. mashed pumpkin
  • 24 oz. evaporated milk
  • 2 unbaked 9” deep dish pie shells

Preparation

Step 1

Combine sugar, salt, cinnamon, ginger and cloves in medium bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shells. Bake in preheated 425º for 15 minutes. Reduce temperature to 350º; bake for 40 – 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 3 hours. Serve or chill. Serve with whipped cream.
